"Lonely Planet's Trekking in the Patagonian Andes" is better for Torres. Dont know about porter, but I did see some people on horses. It's been a while since I was there, so things could have changed.

We hiked in Torres del Paine in Chile and took a daylong guided bus/boat trip from El Calafate in Argentina to see glaciers in the Los Glaciares National Park. They are nice complementary ways of seeing the landscape. But there are supposed to be great hikes off El Chalten in Argentina too.

We went for 2 weeks. We did Santiago -> Valparaiso -> Santiago -> plane to Punta Arenas -> bus to Puerto Montt -> 5 day hike in Torres -> back to Montt -> bus to El Calafate (Argentina) -> bus to Rio Gallegos -> plane to Ushuaia (Tierra del Fuego) -> plane to Buenos Aires. Sometimes there's a direct plane from El Calafate to Ushuaia. Ushuaia has great seafood but if you're short of time that's the first place I'd drop. When we went the peso was very weak and these great restaurants were very affordable. You can also shorten/lengthen the hike in Torres. Mind the ferry schedules across Torres lakes to avoid wasting time.

There are plenty of tourists/hikers, mostly European. Refugios (trekkers huts) in Torres can fill up. Also the value hotels in smaller places. Tents give you flexibility but weigh you down.
I recommend Footprint South American Handbook and Lonely Planet's Trekking in the Patagonian Andes.

HiTHis is absolutely amazing....we have been thinking of going to the Patagonias but are a bit confused in terms of whether we shld do the Chilean or the Argentinian. Would ideally wanna do both, what are some of your inputs. And how long did u go for?
